I think most eaters today have palates numbed by 'salty' and 'sweet' to industry standards...real flavor is masked. My choices in the market are limited by what industry offers...super sweet tomatoes and one-note peaches which lack nature's complexity and bland, tired herbs...but consumer demand could help our palates recover...agreed, we all deserve more.
